Eclairs are custard cakes. Such a wonderful dessert can be prepared at home. This is not to say that the recipe for making eclairs is simple, however, if you learn how to cook them, you can become a real confectioner. Eclairs were invented by French culinary specialists. The word eclair itself can be translated as lightning. There is a version that the cakes were so named for their ability to quickly increase in size when baking. Eclairs are baked quite quickly – 30 minutes is enough to make a soft and fragrant dessert. Traditionally, the filling for eclairs should be sweet. Most often, cream or curd cream is prepared. From above, eclairs must be covered with chocolate icing, nut or waffle chips, syrup.

Sift flour. Pour water into a deep cup, put on fire and bring to a boil. Add butter, salt, mix, boil again, then remove from heat. Add flour to hot water, knead a thick dough, which should not stick to the walls of the cup.

Break the eggs into a separate cup, beat. Gradually and gently pour the eggs into the dough, kneading thoroughly.

Transfer the finished dough into a pastry bag. Cover the baking sheet with baking paper. Squeeze the dough onto a baking sheet in the form of small sausages at a sufficient distance from each other so that they do not stick together.

Eclairs bake for 30 minutes in a preheated oven to 200 degrees, then turn off the heat and leave the cakes in the oven for another 10 minutes so that they do not settle.

Make cream. In a deep bowl, mix mascarpone, cream, and powdered sugar beat thoroughly (you can with a mixer). The cream mass should become homogeneous and thick. Remove the finished cream in a cool place for 30 minutes.

Fill the fully cooled eclairs with a confectionery syringe with cream. Before serving, sprinkle the finished cakes with powdered sugar or chocolate icing. Bon Appetit!
