Cook croutons. From the baguette, we cut off the diagonal slices and cut them into rectangles. We spread the bread on a baking sheet, pour 2 tbsp. l olive oil, salt, pepper and sprinkle oregano. We send it to the oven, heated to a temperature of 250 degrees, for several minutes.
Cut the small fillet from the chicken breast and salt. In a pan, heat 1 tbsp. l olive and 1 tsp. butter spread the chicken. Pepper fillet, fry until golden brown on both sides. We send the fried chicken into the oven, bring to readiness and then cut into thin slices.
Let's make the sauce. Separate the egg whites from the yolks. Salt the yolks, add ½ tsp. mustard, beat with a whisk, add 3 tbsp. l olive oil, lemon juice and whisk again. Grind the anchovy fillets in a mortar and add to the sauce. Pour a few drops of Worcester sauce and mix.
Mix iceberg leaves with sauce. Gherkins are cut lengthwise into quarters, add to the salad. Cherry tomatoes are cut in half, spread in a salad. Add baked croutons and chicken slices.
