Cheesecake (cheese cake) is a very popular dessert that can be found on the menu of any restaurant, cafe or pastry shop. Why do we love cheesecake so much? For its delicate creamy texture, silky texture and not sugary sweetness. Previously, cheese pie was some kind of exotic, but now any housewife can cook a cheesecake.
Cheesecake is traditionally made based on shortbread and soft cheese. Commonly used cheese is Philadelphia, Mascarpone, Ricotta, Buco or Almette. But in the absence of these, you can use ordinary homemade fatty cottage cheese. There are two ways to make this dessert:
cold, that is, without baking. In this case, the cheese mass is combined with gelatin or other thickeners to keep the cheesecake in shape.
hot – in this case, the cake is baked in the oven or cooked in a water bath.
Variations of fillings are also not small: with fruits, cookies, chocolate, with the addition of alcohol, etc.
We will prepare a classic cheesecake with Philadelphia cheese in a water bath.

We grind cookies in a combine with a knife. You can do without a harvester. In this case, put the cookies in a tight bag and roll out with a rolling pin until small crumbs. Then add soft or melted butter to the liver and knead the dough.

We take the form and shift the resulting shortbread dough there. We distribute the dough in shape, forming a dense layer of cake with high sides.

Now it's up to the filling. In a deep bowl, combine cream cheese with powdered sugar and vanilla, whisk lightly. Then add eggs one at a time, without ceasing to work with a whisk. Pour cream there and knead until air homogeneous mass. Strongly beat the filling is not recommended.

Pour the cream into a mold and evenly distribute it throughout the volume.

We cover the form with two layers of foil, trying to avoid gaps, otherwise, water will fall into the dessert. We take a container larger than our cheesecake form, pour boiling water 3 cm from the bottom into it.

We put the container in the oven, preheated to 180 degrees, for about 1.5 hours.
For some time, the finished cheesecake needs to be left to stand in the turned-off oven and then in the refrigerator.
