Grind 100-130 g of pork greaves in a mortar, add a pinch of wheat flour and mix.

Sprinkle the working surface with flour, layout 300 g of puff yeast-free dough and cut each sheet in half, add chopped pork greaves and crush them on top.

Roll out again: first in length and then in width. Trim the edges and sprinkle the dough with flour. Once again, fold three times and roll. We make tucks, roll out. Trim the edges, creating an oval shape. We put the dough on a baking sheet with baking paper.

In a glass, mix 1 egg and a little water, grease the surface of the dough with an egg mass, sprinkle it with sugar evenly. Add pine nuts on top and crush a little.
