    Panovani is a traditional Georgian dish. Penovani is a variety of khachapuri and is made from puff pastry. The word “foaming” itself is translated from Georgian as “puff pastry”. Cheese is used as a filling for such baking. Foaming is baked in the oven and served immediately – this is the most important rule of the use of such treats. The success of such a dish depends on the test. Puff pastry needs to be rolled out for a long time and thoroughly into sufficiently thin layers, between which butter is subsequently laid. It is also worth noting that you need to roll out the dough in one direction – from yourself. Sometimes food acid is added to the dough, which increases the elasticity of gluten. To make the dough lush, it is necessary to sift the flour several times, thereby saturating it with oxygen. Water is usually used for puff pastry, but it can be replaced with milk. At the same time, the taste of the dough will be much better, but its elasticity will decrease.

    Pour the warmed milk into a deep cup, add yeast, sugar, egg and a little flour. Mix thoroughly with a whisk. Leave the dough for 30 minutes in a warm place. Sift the remaining flour 2 times with salt, add oil (20 g.)

    Put the rising dough in sifted flour, pour in the milk and knead the dough. Roll the finished dough into a ball, cover with cling film and put in the refrigerator for 1.5 hours.
