    Translated from Italian, the word “cannoli” means “small tube.” Cannoli as a dish is a crispy tube, which is filled with a filling of cheese, cottage cheese. Often various syrups are added to the filling: berry, chocolate, wine, which gives the flavor a piquancy and originality. Cannoli is very popular in Sicily and is considered a classic dessert. The size of the cannoli can vary, it all depends on the area where the dessert is prepared: in some places the cannoli are very small in size, with a finger, and in other areas of Sicily you can find fist-sized tubes. Such a dessert can rightfully become the decoration of any festive table: the taste of a crispy straw with bright and juicy filling can drive every guest crazy.

    Sift flour, pour into a deep cup, add sugar, salt, and cinnamon, mix thoroughly. Cool the butter, cut into cubes, put in a cup. Mix the ingredients by hand, grinding flour with butter. The dough should look like crumbs. Sprinkle the work surface with flour, put the dough on it, knead for 8 minutes. Wrap the resulting dough in cling film and put it in the refrigerator for 60 minutes.

    Divide the chilled dough into 4 parts. Roll each part into a very thin layer with a thickness of about 1 mm. You can use a pasta machine. Using a culinary ring, cut round dumplings from dough layers. Wrap each piece around a metal tube, connect the edges and fasten, grease with egg white.

    Pour vegetable oil into a deep pan, heat to 180 degrees. Dip the cannoli in the oil, fry for 2 minutes until a bright brown color. Put the fried tubules on a paper towel, dry a little.

    In one container, mix sugar, vanilla, ricotta, cinnamon, add zest. Beat with a blender until a creamy mass is formed. Transfer the cream into a cooking bag, fill them with tubules.
