Tomato and Fried Eggplant Salad
3 pcs. Eggplant
- 3 pcs. A tomato
1 PC. Red onion
Cut eggplant, tomatoes and onions. We send the eggplant in a bowl, salt and leave for 15-20 minutes. Squeeze them and deep-fry.
Grind cilantro and green onions, mix with sugar. Marinate onions with salt, sugar and wine vinegar. Mix fried eggplant, onions and tomatoes. Salt and add sugar.
Decorate with herbs. Season with olive oil and wine vinegar. Bon Appetit!
