    Transfer the fillet into a bowl, salt, pepper on both sides, grease with olive oil. Fry the meat in a pan from all sides until a crust appears. Put the fried meat in a bowl, pour with honey, then return to the pan and caramelize.

    Wrap the finished meat tightly in foil and leave it for a while. Then cut the meat into thin slices. We spread turkey slices on parchment in one layer, cover the meat with a sheet of parchment and fry in a grill pan without adding oil on both sides.

    Separate the proteins from the yolks, use 1 yolk and 3 proteins, salt, add mustard. Beat the sauce with a blender, gradually pouring olive oil into a thin stream. Then we spread the canned tuna, capers and chopped cilantro, again pierce with a blender.
