    Yogurt is a traditional Georgian dairy product. According to legend, yogurt is a source of longevity, and many Caucasian centenarians who have celebrated 100 years or more have consumed a large amount of yogurt. Often, yogurt is called a drink of beauty and youth, since it contains a lot of sour-milk bacteria that can have a strengthening effect on the body. The drink is also rich in vitamins A, B, it contains many trace elements such as calcium, phosphorus, potassium.

    To prepare a real, original yogurt, you need not only real sourdough. Traditionally, yogurt is made from milk of Abkhazian cows. It is somewhat different from the cow we are used to, as the Abkhaz cows are very active and eat fresh grass year-round.

    You can eat yogurt and not only as a separate drink. It is often added to the dough in the preparation of khachapuri, diluted with water, used in the preparation of okroshka. Often in the Caucasus, yogurt is used instead of sour cream and as a sauce for salads and meat dishes.

    Boil the milk.

    Cool boiled milk to room temperature. This can be checked by dipping a finger in milk: it should not burn or freeze.

    Add leaven, mix thoroughly. Pour the resulting drink into a container, wrap, put for 4 hours in a warm place.
